I like the combo of bacons concept - I'm thinking canadian on top with brown sugar crumble, hickory smoked layered around the bottom as an outer "crust" on top of a pie crust, and pancetta mixed up on the inside with regular mashed potato, maybe with a bit of light cream mixed in (sweet potato might be too much savory in concert with the bacons).
